Why Pieropan matters to Soave

For a long time Soave was among Italy’s most exported and least respected white wines: made in volume, and widely dismissed as simple and anonymous. That changed when a handful of producers began treating Garganega as a grape capable of expressing soil.

Pieropan is the name most associated with that shift. By vinifying individual vineyards separately — starting with Calvarino — the estate introduced the idea of crus to the appellation, showing that two parcels a few kilometres apart yield profoundly different wines. It is an approach that looks obvious now and was anything but at the time.

The crus: Calvarino and La Rocca

The contrast between the two historic vineyards is the most direct way to understand Soave:

  • Calvarino — volcanic, basaltic soil. The wine is taut and mineral, with marked acidity and an ageing capacity that surprises anyone expecting a white to drink young.
  • La Rocca — limestone soil, on the castle hill. The result is a broader, rounder Soave with more weight and breadth.

Tasting them side by side in the same vintage is the most instructive exercise available in this appellation: same grape, same hand, opposite outcomes.

Where it is and how the visit works

The winery is in the town of Soave, one of the most photogenic villages in the Verona province, enclosed by medieval walls and crowned by its castle. From Verona it is roughly 25–30 minutes by car heading east.

Visits are by appointment. On the days we organise, the tasting takes place at the cellar with a sommelier, while lunch is arranged at a selected restaurant in the Soave area rather than at the estate. That format gives the winery the time it deserves and then places the region’s cooking in its proper setting.
